
Quick description:
This pesto dish is one of my favorite recipe discoveries in years. I found it on the Godtopus Eats blog. It's heavenly.
Ingredients:
2 cups packed fresh basil leaves, washed and dried
1 small minced garlic clove
3 tbsp pine nuts
1/2 tsp kosher salt
1/2 cup non-cheapo olive oil
handful of green beans
a few small red, new, or fingerling potatoes
1/2 cup freshly grated Parmesan-Reggiano
2-3 tbsp freshly grated Romano
3 tbsp room temp. salted butter
Pasta (I like Rotini best for this dish)
Instructions:
1) Put the following in a food processor and blend: basil, garlic, nuts, salt, olive oil. Blend to the consistency you like in pesto.
2) Scrape mixture in a large mixing bowl and add the two types of grated cheese and the butter. Mix together till it coheres.
3) Boil pasta according to package directions.
4) While pasta boils, wash potatoes and slice into thin, bite size slices. Wash green beans and remove stems. I like to snap the beans in half to make for easier bites.
5) Boil the potato slices for five minutes, then retrieve them from the pot with a slotted spoon. Keep the water boiling and drop in the green beans for three minutes.
6) Drain the cooked pasta and add to mixing bowl containing the pesto.
7) Add potatoes and green beans to the bowl and mix everything together till you reach an even distribution.
8) Serve with crusty bread and extra Parmesan to sprinkle on top.
Makes 3-4 servings.
